weight off week 10

Successes? failures? exercises/recipes to share? go nuts.
I gained 2 pounds but given my period show be here any minute now, I'm going to chalk it up to water weight and not start criticizing myself for gaining weight.
Here's another beginning cook friendly recipe. If you can boil water and chop things, you've got this one kicked. It's pretty good but as always, I think I like tabbouleh then I sit there going, hmmm am I sure I like this texture? The taste is very good and you can always play with the spices and the veggies going in without greatly impacting calorie count
Minted Tabbouleh
Serves 4
1 cup bulgur
1 cup boiling water
1 large tomato halved, seeded and chopped
2 mini (Persian) cucumbers diced
2 celery stalks diced
½ cup fresh chopped mint
½ cup chopped fresh parsley
1 table spoon lemon juice
1 tablespoon extra virgin olive oil
2 teaspoons ground cumin
½ tsp salt
1/8 tsp black pepper.
1. Put bulgur in large bowl. Pour boiling water over and let stand until water is absorbed @ 30 min.
2. Add all remaining ingredients to bulgur, toss well to mix, transfer to serving bowl. Serve at once or cover and refridge of a couple days
@ 181 cal and points plus value 4 on the weight watcher system
Note: I prefer to use a little more lemon juice and I use garam marsala instead of the spices since they’re all in that mix.

Date: 2011-03-15 06:46 am (UTC)That recipe sounds like it might be intersting, but it also seems like it would be really starchy for weight loss purposes. I assume it's a side dish, so with WW, I have only something like 21 points, 4 is a lot to give up for a side. Doesn't really matter. I wouldn't know where to get exotic ingredients like that anyway outside a trip to Jungle Jims... and even then, besides the half tank of gas, I'd guess it'd be more expensive than I'd like to pay. I was mad when Kroger wanted $.29 for a bottle of grated lemon peel, and still inclined to think that the $5.49 I eventually paid for another bottle I finally found was too high. Adding California to the description does not equal $2 price hike if you ask me.
Anyway, for the moment, I'm having decent success. I just need to stay focused. Hopefully the weather will break and I can get more physical activity. Already a lot of my clothes are fitting better. This is definitely a good thing.
