very late and well what point is there for me any more? Sigh. still on the plateau.

Here's another recipe. It's from the weight watchers book. It's a little more carb heavy than I usually put up but it's tasty and it's a very good way to use up left over chicken.



Picadillo

2 tsp olive oil
2 onions, chopped
2 cups of shredded cooked chicken breast
1 Granny Smith apple, peeled cored and chopped
1 cup of canned stewed tomatoes with juice
¼ cup reduced sodium chicken broth
2 tbs dark raisins
2 tsp cider vinegar
1 tsp minced chipotles en adobo
¼ tsp salt
¼ tsp black pepper
¼ tsp cinnamon

Heat oil in skillet over med. Heat. Add onions and cook, stirring until lightly browned @ 10 min. Stir in all remaining ingredients, cook, stirring until liquid is reduced and flavors blend @ 10 mints.

Per serving (@ 1cup) 221 cal, 5 g fat, 16 g sugar pointsPlus value 5

NOTE - i prefer using fire roasted tomatos and you can adjust the heat level however you'd like. Put the extra chipotles in the freezer to keep them since there'll be way more in the can than you need

sounds tasty. I have some chicken breast marinating in tomatillo salsa to grill.
was sick last week, and easter got in the way,but i didn`t get too far off base so I`m ok with that.

I`ll be back to cutting the wine back to pretty much zero this week. It does suck, but it seems to really make a difference so that helps...

thanks. Right now I'm not doing all I could because of the shoulder ruling out most exercise. I hve to try to eat less or something

I weighed in at 148 with all my clothes on. I'd estimate that at 146... which is not progress, but not gain. I just put some major stress and bad influence out of my life though, so I hope that's going to make a difference. The weather is finally clearing a bit, so maybe I can ride my bike again after 10 weeks solid of nothing but rain unless it was cold or night time. >_

yeah if this rain ever stops you'll get a lot of exercise in so that should be a help. Getting rid of stressors will too
