So I ended up not getting much done today but I DID go back to Jackson to pick up things I forgot (and still forgot one), took pictures of the for sale homes (more later) and used up the 8$ coupon I had for CVS pharmacy which just so happened to have a cat toy I've been looking for, one of the wooden boxes with holes in it that they fish things out of.

I think it honestly took them less time to figure out how to get the stuff out than I did (granted it was all in a bag that I had to fish out as a unit...) In fact of the 6 items inside the box they've already lost 4. I keep putting the mouse and one remaining (non-jingling) ball back in. They do love it. It was only 2 bucks after my coupon.

They also woke me up at 6 AM by racing thru the house destroying everything I own. sigh.

Okay so I took pictures of the relative cheap houses Mom found and sent them plus several others on the street and nearby ones (ALL of Jackson is for sale, that's not a good sign). Dad was like um are ALL the houses this old and so close together? Isn't there anything like from the 1960's with a hint of a yard'

Now you know my pain Dad. yes but most of that is outside of town and liquid propane and that was costing me 500 a month 7 years ago. THanks but no (it might be better here since it isn't as cold as WI and I don't remember what it cost in FL but I think only the hot water tank and oven ran off that)

I did find this house. I will call to see what it cost. I know it's out of my price range and is more in town than I want to be but it's within walking distance of my favorite pizza place and the library. ELD is already planning to move to hell here to take up part of it.

The one rule is we must keep it clean (HA)
Seriously considering this one The only downside is, I already know it's at the outer limits of my range. The one thing I don't like about this realtor over others is that it doesn't tell me what projected payments would be a month. I don't want to waste their time. Just found out a friend of mine's granddad works for them though

So weight off...it's HARD to tell if I'm losing weight because apparently my scale sucks. It says I'm gaining but the doctor's office has me down as losing 5 pounds since last time. I'll go with that over the walmart scale. So maybe I'm down 5 pounds. I DO have recipes this time. I had an Asian styled dinner tonight and it was good.

Hot and Sour Soup (weight watchers)
6 dried wood ear mushroom (I used shitake since that’s what I had)
4 cups reduced sodium chicken broth/stock
3 tbs rice vinegar
2 tbs reduced sodium soy sauce
1 tbs chili garlic sauce
1 tsp dark sesame oil
½ lb low fat firm tofu diced
1 (8 oz) can of bamboo shoots, drained and thinly sliced (or not sliced if you get lazy)
3 tbs water
2 ½ tbs cornstarch
1 large egg white lightly beaten with 1 tbs water (I admit it, I used the whole egg)

1. put mushrooms in a bowl of water let stand 15 min.
2. combine broth, vinegar, soy sauce, chili garlic sauce and sesame oil in large saucepan or dutch oven and bring to boil. Add mushrooms, tofu and bamboo shoots. Reduce heat and simmer @ 10 min.
3. stir together water and cornstarch in a bowl until smooth. Whisk in about a ¼ cup of hot broth then whisk all of it into the soup. Cook while stirring constantly until soup bubbles and thickens. Remove from heat and slowly drizzle in egg mix while stirring
serves 8
¼ cup soup - 52 cal, no fat, no cholesterol, 578 sod, 7 total carbs

The soup is from Weight Watchers and could be completely vegetarian if you switched out the chicken broth for veggie. If you wanted to put in the pork to make it more traditional I leave it to you to figure out the calorie/fat count. It is missing some more traditional things but I'm sure you could add in scallions for instance without adding much to the calories.

Beef & Broccoli
3 tsp cornstarch
1 tbs reduced-sodium soy sauce
3 cloves garlic minced1/4 tsp crushed red pepper
12 ounces boneless beef top sirloin steak bias sliced 1/8 inch thick
4 ounces Chinese egg noodles or whole wheat vermicelli (udon or soba work too)
1 lb fresh broccoli (I used frozen)
3 tbs hoisin sauce
2 tbs water
2 tsp dark sesame oil
1 tbs canola oil
¾ cup reduced sodium beef broth
1 cup quartered and/or halved cherry tomatoes (I omitted them because I don’t like hot hunks of tomato)

1. in a medium bowl stir together 2 tsp cornstarch, soy sauce, garlic & red pepper, add beef and marinate for 15 min. at room temp
2. cook noodles as directed but omit salting the water
3. cut broccoli into 2 inch florets (or be lazy like me and buy it that way)
4. mix up hoisin, water, remaining cornstarch and sesame in a small bowl, set aside
5. heat oil in large skillet and stir-fry beef for 1-2 minutes until pink inside then remove from pan, set aside.
6. add beef broth to skillet to deglaze, add broccoli, cover and cook 3-4 minutes until crisp tender
7. add sauce to broccoli, cook until thickened, add beef and tomatoes, heat through, serve over noodles

serves 4 (11/2 cup beef/broccoli, ½ cup noodles)
379 calories, 14 g total fat, 48 mg chol 532 mg sodium, 39 g carb

This was from my Diabetic cook book. I think next time I'll make slightly more marinade and maybe spice up the whole thing a little more but it was pretty good. You could eliminate the noodles and drop the carbs if you wanted.

this is passable, tasty for health food. there are a few more authentic ones online BUT that does mean access to better Asian markets than i have

I've been bad on my diet. Especially this weekend. Crappy weekend. I woke up this morning with my throat sore and full of crud. Yay. At least the cat is back to normal, although he doesn't approve of me not giving him treats from the Magic Treat Place, oh no sir.

The house looks gorgeous, if it's affordable and where you want to be.

the one in the link...i have to drive out there and make sure there's not a hillbilly in a shack just outside of frame

I had Udon soup for super tonight. Mmm.

You're right, we'll have to keep it clean. Well, with three dogs and three cats...

The recipes look yummy.

Cute houses, both of them. I might try that beef & broccoli recipe. Yum.

I'd go with the doctor's scale, too. :-)

OH GOD THAT HOUSE!!! ♥♥♥ That's a good value from where I'm at. My dad just sold a much smaller house for the same amount and it was in lots worse shape. (I looked through the pics and when I saw the pantry my first thought was CAT BOX ROOM lol)

Congratulations on weight off!! I slipped up on my Zumba/Weight Watchers diet because I was sick and pounding down orange juice like a fiend, but I'm starting the WW again today. I think I'm gonna try that beef and broccoli soup, that sounds sooo good.

I swear to god evil little dog had that same wallpaper in her pantry in FL. it's a nice house, the prices are falling like rocks here since everyone is out of work (and more than 60% of these people have nothing but a h.s. diploma or less)

the beef/broccoli isn't soup. it's an entree but you probably could put in more broth and make it so. being sick is a good reason to get off the diet in my book
