Crustless quiche with goat cheese and scallions

2 tbs I can’t believe it’s not butter spread divided (or whatever butter substitute you want or heck real butter, go nuts)
12 green onions cut into small pieces
½ tsp kosher salt divided
½ tsp ground pepper divided
4 eggs
4 oz goat cheese sliced
½ cup each half and half, sour cream and milk
Dash of hot pepper sauce and Worcestershire sauce

Preheat oven to 400 F. Grease 9inch round glass pie dish with 1 tbs of the butter spread.

Melt the remaining butter spread in a skillet over medium heat. Cook green onion with a ¼ tsp salt and pepper, stirring frequently, about 2 minutes. Turn onto a baking sheet and cool in fridge. Whisk eggs in medium bowl. Stir in goat cheese until fairly smooth. Season with remaining salt and pepper. Whisk in remaining ingredients. Pour egg mixture into greased dish, sprinkle with green onions. Bake 30 minutes or until golden brown. Cool 20 minutes. Refrigerate any leftovers. Serves 4.


note: While it is diabetic friendly in that it has a low carb count, it can be higher in fat which is an issue. This can easily be made with low fat sour cream and milk.

Also note: I know better but still messed this up. Do not use the goat cheese fresh from the fridge. It needs to come to room temp or be softened in the microwave or it will not mix into the eggs right. This recipe came from Kroger's.

I love the combination of green onions and eggs - the first omelet I learned how to make when I was a kid was a scallion omelet with sharp cheddar cheese. This sounds really good, too, and we've been getting scads of nice green onions in our CSA share. Now I have an excuse to go to Trader Joe's, to get the goat cheese. (Our local Food Lion barely carries anything any more exotic than Velveeta! >_< )

that sounds about like the first omlet I ever made as well.

yeah i often get cheese from TJ when i go to columbus. THIS is the reason I want to live in Jackson and not Gallipolis (the other larger town around here) Jackson has a Kroger's with fancy food. Gallipolis has a wal mart and a sad foodland
