and then I thought 'wow those beet greens HAVE to be good for something' so I went looking and found this recipe then modified it.

I also did what I said I would. I dug into the pantry and pulled out three items from my hoard to make because I have a HORRIBLE habit of buying food and hoarding it rather than using it. (like the zombie apocalypse is just around the corner or something). In the meantime I found FOUR items that were nearly a decade old. I have no idea how/why because I cleaned that pantry out before and MOM did too. Even she's mystified. I'm beginning to think it's the TARDIS.

I cooked Easter dinner. Gnocchi soup (a passing imitation of Olive Garden's), rotkraut (i.e. red cabbage & apples), roasted golden beets with balsemic-mustard vinegarette & goat cheese, carmelized ham steak with charred pineapple relish & candied peppers and for dessert raspberry-balsemic marinated strawberries with black pepper. There's even Tykvenitsa millet porridge for breakfast tomorrow in the crockpot (not pictured). When I cook, I really cook.

I also harvested my eggs out of their respective dyes. The blue is from boiling red cabbage (the aforementioned rotkraut). It's very easy to do. Boil cabbage, reserve for eating, decant necessary amount of blue water, add vinegar (I eyeball it) and toss in hardboiled eggs.

The tumeric was even easier. Take tumeric powder, water and vinegar. Mix. Add eggs. They came out a nice yellow. However, tumeric is a bit pricey to be wasting on this (A Hindu friend gave me a shit-ton when she moved so...)

Not really a good thing for kids though because this isn't as fun and splashy as making multicolored eggs and it takes about 12 hours to color. For some reason (I suspect drugs/alcohol/too much family time) [livejournal.com profile] evil_little_dog thought I might possess the patience to do galaxy eggs. After living with me for 3 years you'd think she'd know better. THey are super cool though.

And there was a link in the tumeric stuff that said tumeric is used throughout India as a face rejuvenator and is good for the skin. My brain goes hey, you have a lot of tumeric paste in this bowl because you over did it. Why let it go to waste? What my brain should have said was hey isn't this the shit they use to color yellow mustard that never comes out? So I slather my face. It felt cooling and good...and left my skin stained the color of mustard. I considered briefly just leaving it and calling in jaundiced tomorrow but instead jump into the shower with one of those exfoliating scrubs and removed a layer of skin. Did it help my skin be beautiful? No clue since yeah, exfoliation.

But I keep forgetting to do my 100 things for recipes so let me whip up a tasty meal for Valentine's Day (even though I loathe it).

First while these are supposed to be sort of diabetic friendly most of these aren't (points to the holiday). In fact this first one is the farthest thing from healthy are you can imagine. No this is where you decide to give zero fucks about that and indulge in an absolute orgy of bad deliciousness. And you can thank Alton Brown! I'm not going to include this in my recipes because I'm strictly link you to HIS blog. It's fatty. It's salty. It's sugary. It has nitrites. That's right. It's BACON. Bacon covered in brown sugar and if you think that sounds gross, you're wrong. You couldn't be more wrong. I never knew I could eat a pound of bacon in one sitting. I didn't want to know that. I practically need a muzzle to stop myself.

DO play with the recipe lacquered bacon I have found in my oven 400 is too hot. If you have ever worked with sugar you know it's a fine line between browning it and burning it to hell and gone. I backed the heat down to about 385

Now to be perfectly honest, if I have to live in Pomeroy I think I might rather have this house At least I get a great view of the river that will eventually murder me. It's 35 miles from work and about 25 from Athens

this house is nice. I need it to be several thousand cheaper and I don't actually like open floor plans (as in I kinda hate them but I could live with this one) It's 47 miles from work but about 15 from Athens

And a bonus song. I've liked this one but never saw the video. It's a good reminder no matter how bad we have it, it can worse. I had CF patients. Most never even made it to 30. It's horribly sad.

Except for the turkey. So far we have overnight mashed potatoes, wild rice and cherry pilaf, pecan topped mashed sweet potatoes, stuffing and more stuffing, deviled eggs, fresh cranberries, 8 pies, and the beginnings of the gravy.

I can not feel my feet currently. There's 20 lbs of cat on them. God he's fat but he's very warm.

I got all my grading done and started on rereading my nano from it's beginnings which were the short story part from 20 years ago. And wow, there are a lot of issues but I'm taking them as opportunities to expand the beginning. I'm down to around the last 8 -10K so it will be a way to make that word count.

It snowed some. Not much and not enough to stick to the asphalt. It looks quite pretty.

The post office is messing with me. First it mailed a package to me and in 2 days it went BACK to that post office and then out...somewhere. And for everyone wanting to mail ME a holiday card please put c/o Judy Evans on the envelope. The post office has told me now if addresses aren't exact they're to send them back. Yeah thanks for being user friendly USPS.

It really helped out because today sucked a bit. The pollen is killing everyone. I've had to use my inhaler. And getting into my office my left foot apparently missed the ground entirely (really foot? You were inside. What was the problem) came down on my ankle, twisted my knee, landed on my elbow against the wall and caught myself with the bad arm which is most unhappy now. And that was before the day officially began. And I was carrying my books, my grading, my lunch and a gallon of water all on the side that gave way (I'm not allowed to carry much on the right yet).

MY ankle is now swollen. My knee hurts. My elbow is black and blue. The bad shoulder is giving me the finger. Can't wait to try and fall asleep with all this going on. And my brother dissed me saying he's seen me cut myself with a spoon...he might be right.

I made this to go with the mushroom soup recipe I posted the other night. It was easy and yummy and hey, diabetic friendly!

I don't watch Bones but if I did I'd have been pissed.

Also it's not possible Bones has been on 10 year which means Angel has been off for even longer. Sigh. I'm getting SO OLD.

I made this diabetic friendly recipe this week and loved it. I'll admit it so many recipes using those healthy greens usually taste, well bitter and not pleasantly so. This was really good and really easy. About the only skills needed are chopping and don't burn it.

A friend got her master's today. I couldn't make the hooding but I did go to the party at Buffalo Wild Wings. It was nice. Also I had no idea how good their sauces are. Wow, the spicy garlic is good but the thai curry was delicious. I wanted to bring it home. Now I'm stopping myself from going on the net to see if they sell it.

Anyhow she got her masters in English and we're all very happy for her. She also got to go on an enviable trip to Italy as part of her studies. Wow.

I had to get my blood drawn today. They fucked it up. The nurse destroyed my left arm before asking for help then asked 'do we need to use a butterfly on you?" yes you do. After establishing that a butterfly will cause less issues with vein rolling and collapse phleb two still using the 18 gauge on me and I have a grape sized hematoma and my entire antecubital region is blue with bruising. She had to keep digging after the vein and still didn't get enough blood. If they had listened...

I made 100 things #23 Rum Balls ) for tomorrow's after graduation bash. Kanda was upset. I SEE you with balls in hand. GIVE ME ONE. Sorry dude, these are filled with chocolate and coconut rum. You can't have it.

If you want it more diabetic friendly either eat small portions with a nice filling salad or use the Barilla plus chick pea pasta or other low-flour high protein pastas. Note: since I am making this for a group and crock potting it, I'm using gigli (rigatoni or penne would work) because the formed shape types are a bit more resilient and won't go all mushy.

Your your laugh for the evening make sure you get all the way to the end. it's worth it.

Speaking of laugh for the day, I voted and made a final exam.

I went into the office, the car obviously laboring, and asked 'anyone know a mechanic who could take this ASAP?' They looked at each other and said didn't we get postcards with 10% off at that new one a block away from my office. And so we had. I called him and went after class. He removed the Vinton Furnance Experimental Forest from under my car. Seriously, did I take off the top of a tree? After driving over 40 miles with it at 50 mph+ it was STILL waist high. Not only that he didn't charge me a dime. All he asked was I consider him in the future. Nothing was damaged by the tree. You better believe I put it on Facebook with my local friends because you don't find people like this every day.

It is suddenly supposed to blizzard today (after them saying all week no snow). It snowed a wee bit, and yes only during the time I was driving. I did meet up with one of neighbors who likes to gossip. In the three weeks I was gone landlord evicted the dumbasses who used to block my car in and had that chihuahua they let run loose. They had NINE adults living in this tiny 2 bedroom apt (no wonder we couldn't find a damn parking place). And the new neighbor who had moved into the place the other evicted person had been in was ALSO evicted, not sure why but he let his vicious dogs charge around free and several people were nearly bitten. It was busy here in my corner of hell.

I should be writing either my big bang, my blog tour posts or editing my Project Fierce short. Instead I'm playing on facebook. Scowls at self.

Also still trying to figure out WHY my inbox hates [livejournal.com profile] wildrider so much. Every time she mails her part of our critique group's info, I never get it (and I look in spam all the time since I'm paranoid about that in general.

To Everyone who stopped by and looked at my cover art. You have no idea how much your support means to me so thank you for going and looking. Apparently it was a mistake to release it before having a coming soon page according to the list (someone asked today). I see their reasoning and I'll do that next time. It's my first novel so mistakes will be made.


Still in PA. It was still so cold my tires are low because of the air contraction. I'm going tomorrow. I don't feel particularly well mind you but I do have to go home.

I am SO happy to finish the urban fantasy short story for Project Fierce (check it out). It's about 10K. Anyone want to look it over (It is NOT erotica but the main character is gay) let me know.


My cousin posted this picture. I need to give it some background. Lucky Uncle's wife (kneeling in front of me) was a 2nd grade teacher and comes up with weird games. She had a game with nothing but pictures of famous people with mustaches and we had to figure out who they were. Whoever got the most won. And Oh we had to wear fake mustaches while doing it. And a simple recipe for one of my 100 things fills. No this one is NOT diabetic friendly or healthy or anything but it is a yummy appetizer. I figured out how to make those brie things I was raving about at the president's party.

Sweet Brie Cups

1. Buy a package of phyllo cups
2. Buy brie
3. mix one to one enough to fit however many cups you're planning to fill brown sugar and butter (i.e. 1 tablespoon of each and it'll do about a dozen cups).

Put the cups on a baking dish. cut little chunks of the brie and put them in the cup (about one per cup) sprinkle on the sugar/butter crumb. Put in an oven (regular or toaster) at 350 degrees for 5-7 minutes. Let cool a minute or so before eating.

My parents amuse me some times. Mom went to see grandma today and told me ‘Andorra was in fine form’ (for the youngsters in the group, go look up the original Bewitched). I showed Dad that New Zealand LoTR and Dr Who stamps/money and told him I wanted to move to NZ. His response was did I think Rivendell was up for sale because Elrond had moved on and he wanted the elf’s house.

Speaking of houses, Mom and Dad were looking up a house for sale in Candor which is the neighboring village and found one for 7 million. Okay the ridiculousness of this needs framing. Candor is a very rural area about 25 miles SW of Pittsburgh PA. Frankly, I can’t think of too many houses actually IN Pittsburgh going for that price unless you’re in Shady Side or Mountain Washington (Fox Chapel too I suppose). So naturally the parents had to go look. It’s a freaking converted Barn. They’re still wondering how that price tag got on the place.

100 things # 17 Mushroom Silvestri )

This is another very easy recipe. Mix it up. I used Portobello for shitakes because they were cheaper. You could just double up on the cheapo button mushrooms. Whatever. This takes very little cooking skill to get right. It’s a nice beginner side dish. I put it alongside steak

I had a surprise today with the declutter effort. I mentioned putting those two sacks of samples where I’d use them and get them out of here. Well the one tonight was…how shall we say? Awful. It got out of here faster than most. I opened it, smeared it on my face (being face cream) and then noticed it smelled exactly like the dog sharks in formalin that we use in lab. Seriously. It smelled like dead, preserved shark. (Bakel is the brand) I don’t know if it somehow went bad or what but my face still stinks like I’ve been dissecting in lab.

That I have little to complain about. I saw a facebook post from a friend of mine from medical school, not only did she lose her sister last month, she also lost her remaining leg to diabetes. And yet her faith in Jesus was strengthened rather than shaken. There must be something so comforting in faith that strong and yet I've never understood it personally. She's also a very strong person in general. I wish I were closer so I could visit more

Though, as I told mom today every meal tells me something. Today I was sick within 5 minutes of eating dinner and still am. That's NOT the gastric paresis. that takes time, it's the delayed digestion that causes the pain and nausea. This is probably gastritis and/or another ulcer (I've dealt with this all my life so..>) It was surprisingly bad tonight given I only had tofu.

It snowed today, a long snow, not particularly deep over all (an inch, inch and a half) but I decided to stay home, do laundry when I have to go up to the doctor on MOnday and just work on my paper, which is pretty much all I did today. Dull dull dull.

Actually I had such a migraine today, food was the last thing on my mind. However I did make 2 new year's resolutions I didn't blog about. Both are last year's failures. One was no library books until I at least read three books I own so I can either shelve to keep (which is getting MUCH rarer in my middle age) or pass on for others to enjoy (because seriously if I wanted to really declutter I'd start with the fire hazard piles of books. No, seriously piles. On the floor. because I've filled five book cases with double books on the shelves where I could fit it)

And two, waste less food (stop hoarding it would be nice too but baby steps). To that end, I am not only going to the grocery store with a list, I'm writing down on the list what days I'm eating what and trying HARD to stick to it. Last week it worked. This week I forgot to make allowances for the left overs. Well they can be lunch I suppose.

And to the lady who mocked me for cutting coupons, you know what between coupons and my Kroger's discount card my weekly food bill has been over 100$ and I've not paid more than 61-75$ per week So there. Bite me (also bite me diabetic friendly foods that are so many $$$). It took me an hour while watching TV to cut my coupons. How is that a waste of my time?

Speaking of watching TV, has anyone else seen SyFY's new show Continuum? I finally saw episode one and wasn't impressed. I know it's not been on long but is it improving. I actually sided more with the villains (well their ideal not their methods) than I did the lady cop who's working for an oppressive corporation that has dispelled all civil liberties. (not to mention the sheer amount of ridiculous already needed to pull off the time travel aspects)

I spent all day research my paper. I think my eyes have crossed and my brain turned to sludge.

Maple Roasted Acorn Squash )

Honestly, this was my first taste of acorn squash. It's a bit...bland. I liked it but I think I would like butternut squash better (but I'm not sure what that does to the sugar count). My oven burned the sugars in the maple syrup so I turned the temp back (though it's possible that crap ass oven isn't heating right)

Thanks to [livejournal.com profile] evil_little_dog I went through my recipe banks for chocolate recipes (for fandom_stocking) and thought you might like to see some of them because of the holidays.

This one is pretty diabetic friendly (the sugar can be substituted with splenda, leaving you only with what's in the fruit and chocolate). It's pretty much a cheesecake without crust.
