It really helped out because today sucked a bit. The pollen is killing everyone. I've had to use my inhaler. And getting into my office my left foot apparently missed the ground entirely (really foot? You were inside. What was the problem) came down on my ankle, twisted my knee, landed on my elbow against the wall and caught myself with the bad arm which is most unhappy now. And that was before the day officially began. And I was carrying my books, my grading, my lunch and a gallon of water all on the side that gave way (I'm not allowed to carry much on the right yet).
MY ankle is now swollen. My knee hurts. My elbow is black and blue. The bad shoulder is giving me the finger. Can't wait to try and fall asleep with all this going on. And my brother dissed me saying he's seen me cut myself with a spoon...he might be right.
I made this to go with the mushroom soup recipe I posted the other night. It was easy and yummy and hey, diabetic friendly!
Garlic-Braised Chicken with olives and mushrooms
1 small chicken cut into pieces (@2 ½ pounds, or like me be lazy and just get the breasts)
Coarse salt and ground pepper
1 tbs plus 1 tsp olive oil
2 heads of garlic (at least 16 cloves) smashed and peeled
10 ounces cremini mushrooms, cleaned, trimmed and halves
½ cup of white wine
½ cup of green olives, pitted or whole (pitted makes for less stone spitting while eating obviously)
1/3 cup chicken stock
Heat large skillet over medium-high heat. Season chicken with salt and pepper. Add 1 tbs olive oil to pan and swirl. Add chicken skin side down and let brown @ 5-6 minutes, remove chicken and set aside.
Add 1 tsp olive oil to the pan, add garlic and mushroom and let brown, stirring occasionally for 5-6 minutes
Add wine to mushrooms and garlic and bring to a boil then cook for a minute. Return chicken to the pain
Add olives and chicken stock to the pain, bring to boil then reduce heat. Cover and simmer until chicken is cooked through. 15-20 minutes

Note: If using boneless chicken breasts, adjust cook time downwards. I used chicken tenders and browned both sides for 2 minutes each and simmered later for about 10 minutes.
Also I like a thicker sauce so I added 1 tbs cornstarch to 2 tbs water then added to the pan in the last minute.
If you prefer to not cook with wine you can substitute it for chicken broth but I would make that low-sodium to compensate for the olives.
