I made this diabetic friendly recipe this week and loved it. I'll admit it so many recipes using those healthy greens usually taste, well bitter and not pleasantly so. This was really good and really easy. About the only skills needed are chopping and don't burn it.
Swiss Chard with Chickpeas
Large bunch of red Swiss chard (@2 lbs) * I used rainbow. I doubt it matters much
2 tbs olive oil
1 medium onion diced
4 garlic cloves thinly sliced
2 scallions thinly sliced (you can skip if these aren’t in the budget)
2 cups chickpeas drained and rinsed
½ tsp kosher salt
¼ tsp crushed red pepper flakes
2 tomatoes seeded and diced (I tossed in the seeds, sue me, I’m lazy)
Juice of half a lemon
2 tbs grated Romano cheese
Wash the chard leaves and dry. Trim the stem ends and discard. Chop the leaves. Boil a pot of salted water and cook leaves for 7-8 minutes. Drain and press dry.
In a large skillet heat the oil over medium heat. Add the onion and sauté for 6-7 minutes. Add the garlic and scallions and sauté for 1 minute.
Add the chickpeas, salt, pepper and crushed red pepper flakes and cook for another minute. Add the chard leaves and sauté for 3 minutes.
Add the tomatoes and cook for 3 minutes. Add the lemon Juice (don’t add before this or it gets bitter). Remove the skillet from heat and garnish with cheese. Serve.
