That I have little to complain about. I saw a facebook post from a friend of mine from medical school, not only did she lose her sister last month, she also lost her remaining leg to diabetes. And yet her faith in Jesus was strengthened rather than shaken. There must be something so comforting in faith that strong and yet I've never understood it personally. She's also a very strong person in general. I wish I were closer so I could visit more

Though, as I told mom today every meal tells me something. Today I was sick within 5 minutes of eating dinner and still am. That's NOT the gastric paresis. that takes time, it's the delayed digestion that causes the pain and nausea. This is probably gastritis and/or another ulcer (I've dealt with this all my life so..>) It was surprisingly bad tonight given I only had tofu.

It snowed today, a long snow, not particularly deep over all (an inch, inch and a half) but I decided to stay home, do laundry when I have to go up to the doctor on MOnday and just work on my paper, which is pretty much all I did today. Dull dull dull.

{Take the 100 Things challenge: 100 (mostly diabetic) recipes!}

Roasted Sweet Peppers and Carrots with Orange and Hazelnuts
2 small orange bell peppers, halved and seeded
5 medium carrots trimmed, scrubbed and halved
2 Tbsp olive oil plus more for drizzling
Salt and pepper to taste
1 navel orange peeled with pith removed, sliced
1 clementine peeled with pith removed, sliced
¼ cup of fresh goat cheese
¼ cup toasted hazelnuts chopped
1 Tbsp sherry vinegar

1. Preheat oven to 425. On a lined baking sheet drizzle peppers and carrots with oil and season. Roast flipping once until golden brown and tender @ 20 minutes.
2. Arrange carrots and peppers on the oranges on a platter, top with crumbled goat cheese and hazelnuts. Whisk vinegar and remaining oil season with salt and pepper then drizzle over vegetables

Notes- from Whole Living magazine. It’s designed to be part of the ‘eat the rainbow’ movement. Orange (so yes you’ll want to spend the extra $$$ for orange peppers) fruits and veggies are a good source of healthy phytonutrients like alpha-carotene, mesperdin and naringenin.

If you don’t like goat cheese (or want to go vegan) eliminate it or substitute it with something else. I used up some brie with this and it went nicely.

I personally don’t like the new craze of soft paired with something crunchy like nuts so I skipped the hazelnuts (not to mention they’re insanely pricey). If you’d like the nuts, pecans or almonds would go well.

If you can’t find sherry vinegar go with a milder fruiter vinegar. I used golden balsamic.

This was a surprisingly tasty dish and perfect for beginners. I mean all you have to do is cut and put in the oven

Declutter Day 18 item tossed -Pair of slippers Why kept- They were the only ones I had why tossed- I didn’t really like them
I would like to find some place other than Goodwill for some of this (the one for special Olympics won't take shoes, purses etc) mostly because I'm appalled that their CEO makes millions. Not sure we have any charity here though strictly for the poor.

Adopt one today!

That recipe sounds really yummy. Lots of things (like hazelnuts and yellow peppers) that I don't normally keep on hand, though, but it would be worth it. I would probably use sliced almonds for the hazelnuts- I use almonds in everything these days.

I can relate to your sentiments about not being able to relate to the faith thing. I can never get any closer to that than a vague feeling that, sometimes, once in a while, things seem to happen for a reason, but honestly, the older I get, the less I even see that one - but the strong personal faith in Jesus and all that... uhm, no. But in some ways I do envy the ones that sincerely have the faith - the comfort and strength they derive from it - especially the ones that practice Christian ethics in all aspects of their life, and don't just use it as a crutch when the going gets tough.

Do you know if your ulcers are at all bacterial in nature? I have had ulcers & reflux over the years, and mine was vastly improved by taking 1-2 tbsp a night of manuka honey for a couple of months. It enabled me to get off of the max doses of both zantac and prilosec (which I'd been on for years, and still had gotten to where I couldn't eat much of anything without having trouble.) It really helped me. They're even researching it now for MRSA and C.Difficile. Here's the WebMD entry http://www.webmd.com/a-to-z-guides/manuka-honey-medicinal-uses (and as I'm sure you know, any alternative medicine is not high on their list, they are prone to downplay it.) Just be sure to get the stuff with the higher UMF factor, then you don't have to take that much for it to have an effect, since your blood sugar is also a concern. If you got one of the higher UMF factors, even a 1/2 tbsp. would probably be enough to be helpful.

I didn't use the hazelnuts but yes almonds would work and are cheaper.

She does try to live by it (unlike my cousin's husband who likes to preach it and not do it)

I know for a fact it's not bacterial. I've been tested many times over the years (unless something's changed) part of it is the fact that I have a bad sphincter valve btw the stomach and esophagus which requires risky surgical repair (it's gotten better in the years I've put it off). I do have honey here but had to stop it because it made the burning so much worse.

Honey's been pretty well tested for it's antibacterial properties though but it's often better on paper than in practice for too many things. Internally it seems to work better.

The manuka honey has even higher antimicrobial activity than regular honey. It's made from the pollen of the trees that tea tree oil comes from, and apparently it has a high hydrogen peroxide content, as well as high amounts of other antioxidents and other good things. It is an antifungal, it works for all kinds of things - somewhere I read they've been using it in burn kits now. They also did a study - the British health service, I believe - where they had people chewing gelled manuka honey and found it healed mouth ulcers and reduced plaque formation on teeth (without causing more cavities from the sugar content of the honey.) It's pretty amazing stuff.

Is what you have different than a hiatal hernia, or is it a form of hiatal hernia?

yes I've used it for ulcers when I was still practicing, it was a pilot study back in the 90's. we also tried maggots (which worked better for some kinds of ulcers)

I have a hiatal hernia, a cardiac sphinctre that doesn't close (that the one at the top), over production of HCL and gastric paresis as well (and for that matter IBS) my GI tract is barely functional most days

eta - I meant honey in general. Manuka is new to me

Oh, man. Sympathies for your friend.

Eating for learning. Of course, what a hard lesson when eating makes you sick.

Do you want a grey stripe dragon? I have a grey egg at the moment.

Great. You've got what I've got. Guts sick as soon as you eat. I'm used to the lower g i issues... but this upper g i stuff is all new to me. I hope it's nothing.

That's sad about your friend. I'm glad she is strong enough to handle that, though.

unfortunately it's not new to me. I've been dealing since I was 12 (which was when I was first medicated). Good luck to you.

thanks. It is sad. It cost her her medical career years ago (it's scary, the class of 93 was cursed, several of us are dead, three of us in my core group of friends are too injured to work in the field)

Thanks for the recipe; looks tasty and I'll try it today.

As for the donating: how about the Salvation Army or a local thrift shop?

I hope you like it

We have to have a Salvation Army around somewhere. There is a local thrift store but it's only open 2 days a week in the middle of the day so I'm not sure what purpose it serves
