Weight Off, week 2
Jan. 16th, 2011 03:32 pmSo, how are we doing? Honestly, I'm still getting rid of all the leftover crap from the holidays that I'm too cheap too just toss. Also I need to see if the school's nursing dept has a good spring scale like in a doctor's office since mine is rather cracktastic.
Anyhow, 2 lbs off if it's to be believed (and I'm not sure it is)
So anyone else have any recipes/tips/exercises they care to share. Let's see them. this is the time and place to help your friends out.
From me another recipe. We all know cauliflower is good for us, full of folate and lutein. Most of us don't want to eat it or will only touch it fried or in a heavy cream sauce (already done for us in the frozen food section) so here is a healthier version that's supposed to be under 100 calories per serving (which I note in the original recipe isn't put into clear amounts)
ROASTED CAULIFLOWER *
1 cauliflower cut apart
Kosher salt & pepper to taste
Spices (see suggestions below)
Preheat oven to 450.
Cut apart the head of 1 cauliflower (or if frozen is cheaper, one 12 oz bag, defrosted)
Drizzle with olive oil and salt and pepper on a lined baking sheet. Roast until golden on one side @ 15 minutes. Flip then roast for another 10 min. serve.
Suggested flavorings
Sharp & Savory – as above but add in paprika while cooking. When done sprinkle with parsley and a dash of sherry vinegar.
Salty & crunchy – as above but sprinkle with breadcrumbs before putting in the cover and toss in come capers
Hot and Sweet – as above but add in cayenne with the salt and pepper, at the end top with lime juice and some pine nuts if you’d like (these aren’t cheap)
Indian inspired – as above but add in curry powder with the salt and a pepper. At the end splash with lemon juice and sprinkle with cilantro
NOTE – acids can change the way things cook and get bitter so be sure to add the vinegar/lemon/lime juices at the end and not at the beginning

The roasted cauliflower with the lime juice at the end would be yummy. Thanks for the recipe! I might just buy some cauliflower after all. :)

You know, looking at this cauliflower recipe, there's another one I remember from the South Beach diet that involves making cauliflower "mashed potatoes". I was really iffy about them, but they were so good! I'll have to go dig out the cook book and find it.

Date: 2011-01-16 10:42 pm (UTC)First tip: if you are a soda drinker, completely cut it out of your diet (even diet soda) I found this helps shed at least 10 lbs.
I am not a firm believer in dieting, so my personal philosophy is to cut your servings...of everything. you can follow food pyamid guide lines for serving info. It also helps if you sort eat things all day as apposed to huge meals. I think an earlyish dinner between 4-6 can be fairly large compared to the other meals. Breakfast can be small and healthy, like friuts, yogurt and granola...or oatmean (though I am not a fan of oatmeal). Always eat before 8pm, no later...but if the need to eat arises like it sometimes does, you should eat light foods like crackers or fruit or whatever. I likea nice cup of tea at night myself. watch the sugar intake as well (and if you are diebetic and follow some of the rules, though my idiot father does not...ugh) than you know to use non-sugar products. Splenda, sweet n low ect.
If you are able to walk and don't have any serious injuries, try to walk as much as you can, you can do this by parking far, or walking around the mall...or something. Anyway thats just some suggestions I made...not trying to enforce or anything, you asked I gave! ^_^

What does your body do with stuff it can't figure out how to use (i.e. the cells are ignoring insulin trying to push sugars into them) Yes the insulin turns it into FAT and it gets stored.

Also, sugared pop should go right out the window. I 100% agree with this. Diet pop with aspartame in it is known to make you feel hungry when you aren't necessarily hungry, so it can also be a contributing factor. IN summer I'm usually very good about drinking water and nothing else. In winter though.. not so much.. heh...

Date: 2011-01-16 11:47 pm (UTC)Today I'm doing better. So I'm going to be dropping a lot of unnecessary carbs out of my diet. I got a new bottle of vitamins and since I've been taking them I've felt somewhat better. I don't feel like I'm starving all the time the last day or so. Also I have been working on decaffeinating myself again, and that will probably help me not feel hungry constantly too. Head hurts a lot of the time though...
I'll have to update in a week. Today I'm at 158. That's nearly 20 pounds up from where I was in the middle of November. Ugh. Nothing fits.
PS. A serving of cauliflower is about half a cup. Same with broccoli and most other veggies.
PPS. Recipe calls for 'sale and pepper'. I think you mean 'salt and pepper' otherwise I don't know what 'sale' is if it's a spice.

I guess I'm rare in that I really like cauliflower (although it's kinda bloating) and often use it to substitute mashed potatoes...
I think soup on diet is a great idea too - looking forward to your receipes - I have a great thai soup receipe which I love to make when I'm dieting, so I'll contribute that when I get home..

Maybe by that time the weather will have stopped being an ass enough that I can actually do that with the EOiT. And actually going to the park with hills to do that, rather than our flat subdivision.

I roast a lot of veg like that, with a minimal olive oil coating, spices and salt (I eat waaaay too much salt). Broccoli is great like that too, especially with garlic, chilli and lemon juice. Aubergines (eggplant to you :P) work well too. This diet so far has involved a lot of roast veg for me. Good job I like it?
