Cool, I see successes out there. Good for you guys. Anyone else in the doghouse howling at the moon over failures? I am. Sadly, I've had to up my insulin and as soon as I do, I gain. Just 2 pounds but still. Sigh.

Exercise still a no go. I can't even find a safe place to walk. I might just have to go to Jackson and park on the street and walk. It's the only place with sidewalks but it's unwieldly to have to drive 25 miles round trip to walk.

A lot of weight loss experts agree that starving yourself is not a safe or healthy way to lose weight. They suggest having healthy snacks throughout the day. It's not easy to thing to find healthy snacks but you can make them. This recipe is so easy even the non-cooks can manage it provided they own a baking sheet. Edamame are very healthy beans (and most grocers carry them now). Supposedly it contains all 9 essential amino acids, fiber, Vitamin C and folic acid. Give this snack a try (do be sure not to burn it)




Roasted Edamame
Ingredients:
8 ounces frozen edamame beans* (do not thaw)
1 teaspoon olive oil
½ teaspoon chili powder
¼ teaspoon dried basil
¼ teaspoon onion powder
¼ teaspoon ground cumin
⅛ teaspoon paprika
⅛ teaspoon ground black pepper
½ teaspoon kosher salt

Preheat the oven to 400˚F.
Toss the edamame beans with olive oil and spices until evenly coated. I prefer to shell the beans so the spices are directly on them but you can spice the shells and just pop the beans out once cooked.
Spread in a single layer on a baking sheet and roast for 15 minutes, stirring once halfway through cooking until the beans begin to brown.



NOTE: You can mix up any sort of spice mix you fancy. Mostly this is here for cooking temps and times. I do use a bit more olive oil. It's a good fat after all.

Boiled peanuts are AWESOME. I have a bag in the fridge now (in AZ, you have to keep nuts in the fridge if you want to have them for any length of time!).

That recipe sounds interesting. not bad on the carbs either. according to nutritiondata.self.com it's 16 grams per cup, 8 of which is fiber, so the net is only 8g. I can't imagine eating a whole cup of these as a snack though. So say half a cup at 4 net grams of carbs. that's doable. Wonder if my Kroger has them or if I'll have to go to Pinewood.

I personally like Kroger's Carb Master yogurt. Favorite flavor is carrot cake. Only 60 calories and 4 net grams of carbs FTW.

I weighed in this morning at 147.8 which is currently just under 10 from where my spike had me a few weeks ago when I acknowledged that being insulin resistant I would need to go back to a carb restriction to get my body back in line. Since I started at Myfitnesspal.com from my initial weigh in there, before the spike, I have officially lost 4.7, one inch off my waist and one inch off my hips. My neck measurement has not changed, but my neck isn't fat, so I don't expect that to change any.

CoM I wonder if you have no place to walk when you're at home, why not schedule yourself half an hour to walk while you are on campus, or at least there in town? Then you can drive home and get a nice shower, have some dinner while your metabolism is still moving a bit. Or even just walk around your building at work when you're done for the day, maybe pick a building that has stairs at either end and just walk up the stairs on one end, down the hall to the other, down the stairs or up another flight and across again etc. A lot of people do that for exercise. I'm still kind of in shock that your school does not provide ANY sort of fitness facility that the professors may use at any time. I definitely get not particularly wanting to work it in front of students, but seems like they should provide SOME times when the teachers can use the facilities. I'd seriously push for that.

ETA: Kroger didn't have these. I ended up going all the way to Centerville Meijer. but I have them in the oven now. I found the amount of olive oil to be plenty. It's just there to get the spices to stick to the beans, after all. I'll let you know how I like them. They'll be out in 7 min.

There. I've finished them. These are pretty good. I did find that the serving size is actually half a cup just like most veggies, and not the full cup listed on nutrition data. Not the first time I've seen what I consider a critical error there, since the stats for a half cup are the same as they had for a full cup. I like the recipe though. Super simple to make and I like the flavor. My only complaint might be that I was hoping they'd crisp up just a bit. But still a nice thing to snack on.

We do not have sidewalks except one and the roads are dangerous to walk on. I leave them to the students.

I am furious about not getting to use the gym. Now I could use the machines with the students staring at me but not the pool. sigh.

Well, I'd seriously be raising Cain about that rule. They need to have some concern for the health of their educators too.

btw, when I said walk around the building, I specifically did mean walk around INSIDE the building. Just set yourself a decent pace and walk the halls for a set period of time and build it up.

I love edamame. They're pretty nice just boiled in their shells in salty water too. And unlike most things that it's impossible to stop eating, they are actually good for you.

I seem to be maintaining, more or less, but at least I'm exercising again, and I KNOW that helps. Got myself some carrots today in the hope that I'll make myself carrot sticks to have around when I'm hungry and snackish, rather than the crap I usually eat. Nuts, too, although I have to watch how many I eat!

I'm not allowed oranges or cookies either. Those are kept for emergencies. Carrots are so sweet i can barely bear having them in soups anymore for that reason. You're allowed a 1/4 cup of any non-starch veggie to 1/2 cup


I'm pretty damned sure the scientists that deal with diabetes every day do know what they're talking about.

1 more lb for a total of 21 off. Have increased weights and toning routines, so am started to firm up now (still have a good chunk of flub to lose too). I snack on fruits/dried fruits, nuts, edamame. Sometimes I'll make toast or a quick egg too. I usually eat 4 times a day (morning, midday, late afternoon, late evening).

I usually eat five. Breakfast, dinner and supper, and then generally there are two snacks, one between breakfast and dinner and then one sometime after supper.

My problem is the new full-time job where I have to sit on my butt all day. My body needs a lot of activity or I balloon up no matter how much I eat (short of starving, which my hypoglycemia won't allow). So between that and the doubled doses of prilosec, I'm gaining - while eating the SAME (the usual salads, sandwiches, soups). Very frustrating and depressing. I try to walk every morning, but it isn't enough to offset 9 hours of sitting - and there just isn't enough time to walk enough...

I`m gonna have to halfway raise my hand. Last week didn`t go so bad, lots of gym time, I was quite busy and so didn`t have time for bad eating and I can feel my clothes loosening..

however blew it on Sat and Sun when I once again succumbed to stress and generally just not being pleased about anything and did some serious bad eating while lying on the couch. I`m pretty sure I didn`t even enjoy it. would be easier to keep to it if life didn`t suck quite so much right now.
Anyway, am off to the gym in a few, so trying to climb back on the horse.....
Sucks about having to up your insulin. It must drive you crazy that dieting and eating well is not helping stabilize things...
