Boy am I sucking at this challenge. oops. Today's recipe is diabetic friendly, yes when you make whole wheat couscous AND add something fibrous like beans, it's okay. The body absorbs it slowly.



Caribbean Couscous Salad
1 cup whole wheat couscous (plain)
1 15-oz can black beans rinsed and drained
2 cups coarsely shredded fresh spinach
1 medium red sweet pepper seeded, coarsely chopped
1 medium mango peeled, seeded and chopped
¼ cup thinly sliced green onions
1 serving ginger- lime vinaigrette (see below)

1. follow box directions for couscous or bring 1 ¼ cup water to boiling, remove from heat, stir in couscous and cover for 5 minutes, fluff with fork ten let stand
2. in a large bowl stir together beans, spinach, sweet pepper, mango and green onions. Add in couscous and vinaigrette and toss. Serve immediately or cover and chill.

Ginger Lime Vinaigrette in a small bowl whisk ¼ cup snipped fresh cilantro, 3 tbs lime juice, 2 tbs canola oil, 1 ½ tsp grated fresh ginger or ½ tsp ground ginger, 1/8 tsp salt and cayenne pepper. (makes 1 serving)

Notes – I got the recipe from Diabetic Living magazine. Personally I like more ginger in my vinaigrette and I think I might use a sweeter onion next time. Also cooking tip: get frozen mango earmarked for smoothies, already peeled, seeded and chopped (though more expensive than doing it yourself)

it's barely even cooking really, if you can chop and boil water this is an easy dinner to fix
